Menu
Breakfast
Breakfast each morning includes coffee, tea, fresh fruits and a variety
of cold cereals.
-Bacon, Eggs and Grits or Hash browns
-Cinnamon and Raisin oatmeal
- Island Coconut pancakes with Butter and maple syrup
- Doug's famous Banana pancakes with butter and maple syrup
- Locally baked coffee cakes and pastries.
Lunch
Lunches are all made with fresh Bahamian Baked Bread
- Tuna salad with sliced cucumber onions sunflower seeds. carrot sticks
and mixed nuts
- Ham and Turkey sandwiches lettuce, sprouts, onion and tomatoes. Mayo
and mustard chips and salsa
- Hummus and veggie wraps fresh veggies and hummus in soft tortilla
- Chicken salad sandwiches with sliced almonds and artichoke hearts.
Fresh veggies.
Dinner
Dinners include a variety if deserts and rum drinks, wine or beer with
the first meal. Please bring your own if you would like additional alcohol.
Consider the small space we have to pack supplies and trash in our
kayaks.
Iced tea and lemonade with every dinner
- Salmon with capers, Garlic mashed potatoes and Baby carrots with "Chief
Sam's orange glaze"
-Pasta with clam and veggie red sauce. Fresh broccoli, carrots, onions
,
mushrooms eggplant make for a hearty sauce. fresh grated parmesan cheese
and locally baked bread
- Steak Fajitas wrapped in flower tortillas stuffed with sautéed
onions,
peppers , refried beans, salsa and vegetables.
Deserts
Cakes, brownies, pudding
Locally baked pastries
If weather conditions allow, we may harvest fresh fish, lobster and conch
to add some local flavor to the expedition menu.
